Herbed Quinoa with Vegetables

1 cup quinoa
2 cups water
1 teaspoon oil
1  medium onion
1  carrot, peeled and diced
1  stalk of celery
1 tablespoon all-purpose seasoning
1 teaspoon lemon juice
Rinse quinoa in fine sieve thoroughly. Place quinoa and water in a saucepan and simmer covered for 10 minutes or until water is absorbed. Meanwhile, cook onion, carrot and celery in oil until tender, add seasoning and juice. Stir in quinoa.
