North African Lemon Dressing
This dressing is suggested for salads with tomatoes, sweet onions, cucumbers, green peppers, or fruit salad and cottage cheese. At Tassajara, we use it aften with salads of lettuce and grapefruit sections.
Ingredients
zest of 2 lemons
1/4 cup lemon juice
1 1/2 teaspoons salt
1/8 teaspoon cayenne
2 garlic cloves, minced
2/3 to 3/4 cup olive oil
1/2 teaspoon coriander powder
1/2 teaspoon cumin
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 teaspoon sugar
1/4 cup lemon juice
1 1/2 teaspoons salt
1/8 teaspoon cayenne
2 garlic cloves, minced
2/3 to 3/4 cup olive oil
1/2 teaspoon coriander powder
1/2 teaspoon cumin
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 teaspoon sugar
Directions
Combine all ingredients in a bowl; mix well and chill before serving.
