Banana Bread (Vegan)

Ingredients
1 package Simply Organic Banana Bread Mix
 powdered egg replacer equivalent to 2 eggs
1/2 cup warm water
2  ripe, peeled and mashed medium bananas
Directions
Preheat oven to 350 degrees.

In a large bowl, combine Banana Bread Mix and egg replacer. Mix in water and mashed bananas. Stir until just moistened.

Pour into lightly greased 9x4-inch loaf pan. Bake for 50 to 60 minutes, until center tests done with a toothpick or knife. (May take 5 to 10 minutes longer, depending on oven.)

Cool for 15 minutes in pan, then remove loaf from pan and finish cooling on rack.
