Baked Cod with Lemon and Olive Oil
Ingredients
4 cod fillets, each 1 inch thick
1 1/2 tablespoons lemon juice
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon dried thyme
1 pinch of {salt}
1/8 teaspoon black pepper
1/4 teaspoon {paprika} (optional)

Directions
Preheat oven to 400 degrees.
Arrange the fillets in a 13- x 9-inch baking dish. Drizzle with the lemon juice and oil, and sprinkle with garlic, thyme, salt, pepper, and paprika (if using) and lightly rub in spices.
Bake until the flesh is completely opaque, but still juicy, 15-20 minutes. Serve with the pan juices spooned over the top.
