Herbed Mustard Sauce

Tofu is a wonderful carrier and can be used to extend the volume of sauces and salad dressings. Silken soft tofu is a form of soft tofu that is very creamy when blended.

1 cup silken soft tofu
2 tablespoons Dijon mustard
1 tablespoon fresh {lemon juice}
1 1/2 teaspoons olive oil
1  garlic clove, minced or 1/4 teaspoon garlic powder
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon salt
1/4 teaspoon black pepper
Place the tofu, mustard, lemon juice, oil, garlic, thyme, rosemary, salt, and pepper in a blender. Blend until satin smooth.
