I use melon, pineapple, and strawberries for this salad, but you can use your favorite combinations.
2 tablespoons fat-free mayonnaise
3 tablespoons chopped crystallized ginger
2 tablespoons honey
2 teaspoons white vinegar
1 1/4 teaspoons poppy seeds
2 cups honeydew melon balls
1/2 fresh pineapple, cut into chunks (2 cups)
2 cups sliced strawberries
mint leaves (optional)
Salad: In a large bowl, combine the cantaloupe, honeydew, pineapple, and strawberries. Whisk the dressing and add to the salad. Toss to coat. Garnish with mint leaves, if using.
