Chris's Kickin' Mustard Ribs

1 cup mustard
1/4 cup honey
2 tablespoons paprika
1/4 cup brown sugar
1 tablespoon garlic powder
1 1/2 to 2 tablespoons cider vinegar
1 to 2 tablespoons chili powder
1 to 2  racks pork ribs or 1 -2  racks pork spareribs*
Preheat grill to medium-low heat. Mix all ingredients together except ribs. Peel film off back of ribs by hand, or carefully with a knife. Spread the sauce over ribs. Cook slowly 30-45 minutes, or until done.

Chef Suggestions
To help your ribs have a more robust flavor, soak them in brine for one to two hours prior to grilling

*Ask your butcher to cut the ribs lengthwise to create bite-size riblets.
