Roasted Portobellos
Ingredients
3 portobello mushrooms (about 1 1/4 pounds)
1/4 cup olive oil
0 salt
0 freshly ground pepper

Directions
GET READY. Preheat the oven to 350 degrees. Remove the portobello stems. Using a pastry brush, brush the portobello caps on both sides with olive oil, and sprinkle each side of the cap with salt and pepper.
ROAST THE PORTOBELLOS. Put the portobello caps in a baking dish, and roast until they are completely tender, 20 to 25 minutes. When the caps are cool enough to work with, cut them into thin, 1/8-inch thick slices at an angle.
