Red Pepper Curry Fritters
Ingredients
1/4 cup warm water
1 tablespoon curry powder
1/2 teaspoon crushed red pepper
1 egg, beaten
1 cup textured soy bits
2 tablespoons vegetable oil
1/4 cup flour

Directions
Place warm water in a large mixing bowl. Add curry powder, crushed red pepper, and beaten egg. Mix well. Add soy bits and stir until moistened.
Heat oil in a skillet over medium heat. Form mixture into 1/2-inch-thick patties, as large in diameter as you want. Dust both sides of patties with flour. Fry patties in skillet for 2 to 3 minutes on each side.
