Berry Yogurt Granola Bars

  1. Combine the rolled oats, rice puffs, coconut flakes, sunflower seeds, chia seeds, salt, and dried fruit in a bowl. Stir to combine.
  2. Combine the tahini, rice syrup, cinnamon, and 2 teaspoons of vanilla extract in a small saucepan. Stir and cook until the mixture is combined and warm. Pour over the rolled oat mixture and stir until everything is well combined.
  3. Transfer the mixture to an 8x8 pan lined with wax paper or parchment. Press the mixture into the pan and place in the refrigerator for 30 minutes.
  4. While the bars are chilling, combine the powdered sugar and 1/2 teaspoon of vanilla extract in a bowl. Add 2 tablespoons of the yogurt and stir until smooth. Add more yogurt if the glaze is too thick to stir. The glaze should be thick.
  5. Remove the bars from the refrigerator and cut into roughly 12 bars. Drizzle with the yogurt glaze and return to the refrigerator for another 30 minutes, until the glaze is set. Store these bars in the refrigerator for up to a week.
