Pineapple Tepache with Cinnamon and Cloves

Use the inedible scraps from an organic pineapple to
make a delicious and refreshing pineapple drink that is
low in alcohol. Ferment longer for pineapple vinegar.

1. Dissolve sugar in a pint of water in the jar. You may use hot water; if you do, wait until mixture falls below body temperature before proceeding to next step.
2. Add cinnamon, other spices and pineapple chaff to the jar.
3. Add (room-temperature) water to two inches below mouth of jar.
4. Secure towel or filter over mouth of jar using ring portion of lid, and leave at room temperature.
5 The wine is ready after 4 days to a week; strain and drink. Or if you prefer vinegar, wait 3 or 4 weeks, then strain and store in a sealed container.
