Make-Ahead Bean Bay Stew

Beans have an affinity for bay leaf, as do stews. Combining these ingredients well before serving allows the flavors to meld, even while away from the stove.
Ingredients:
- 1 teaspoon Frontier Organic Garlic Granules 2.68 oz.
- 1/2 teaspoon Frontier Organic Ground Paprika 2.10 oz.
- 2 teaspoons Frontier Co-op Low-Sodium Vegetable-Flavored Broth Powder, Organic 1 lb
- 2 Frontier Organic Bay Leaf 0.15 oz.
- 1 teaspoon Frontier Organic Whole Thyme Leaf 0.63 oz.
- 1 teaspoon Frontier Co-op Celery Seed, Whole, Organic 1 lb
- 1 teaspoon Frontier Organic Cut & Sifted Dill Weed 0.71 oz.
- 1/2 teaspoon Frontier Organic Ground Yellow Mustard Seed 1.80 oz.
- 1/4 teaspoon Frontier Table Grind Sea Salt 5 lb
- 1/4 teaspoon Frontier Organic Medium Grind Black Pepper 1.80 oz.
- 1/4 teaspoon Frontier Organic Ground Cayenne Chili Pepper 1.70 oz.
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 teaspoons olive oil
- 1/2 cup black beans, cooked, drained
- 1/2 cup pinto beans, cooked, drained
- 1/2 cup butter beans, cooked, drained
- 1/2 cup red lentils, cooked, drained
- 2 cups water
- 1 can (28-ounces) diced tomatoes
- 2 cups sweet potatoes, cooked, peeled and cubed
Directions:
1. Sauté onion, carrots, and celery in oil. Add all of remaining ingredients and mix well. Remove from heat and let sit for an hour or more in the refrigerator.
2. Heat to simmer for 15 to 20 minutes just before serving.
