Pink peppercorns are used for their sweet, fruity, mildly peppery taste and lovely color and aroma. Unrelated to the black pepper plant, pink peppercorns are actually the dried fruit of a Brazilian tree.

Botanical name: Schinus terebinthifolius

While this lovely spice looks like peppercorns (hence the name), it's not really a peppercorn at all; it's the dried, ripe berries of Schinus terebinthifolius, or Baies rose plant. Also known as Christmas berry, Brazilian pepper tree, pepper rose, and Florida holly-- the pink peppercorn plant is in the cashew family (Anacardiaceae) and is related to the mango as well as poison ivy.

Today's gourmet cooks aren't the first to use pink peppercorns in the kitchen. They are found in the cookbooks of Apicius, an ancient (and extravagant) Roman cook who wrote cookbooks advocating the use of complicated dishes with rare ingredients. It wasn't until the 1900s that pink peppercorns were exported as a spice.

Safety: In large quantities, pink peppercorns can cause respiratory and/or intestinal reactions. Common cooking quantities are not likely to cause a reaction.

PepperSuggested Uses: Pink peppercorns are fun to cook with-- they're very aromatic (once ground), beautifully colored, and mildly fruity/peppery, but without the pungent hotness of pepper. Try pink peppercorns with fish, poultry, game, meats, salads, salad dressings (especially vinaigrettes), fruit sauces, asparagus, eggs and sauces for seafood. It even adds interest and kick to desserts. You won't want to use pink peppercorns alone in a peppermill, because they're too soft. They're lovely in combination with black and white peppercorns in a clear mill.

Pink peppercorns are grown in Reunion, France, Indonesia, the West Indies and Thailand, though the largest supplier is the state of Espirito Santa in Brazil.
