Ginger Soy Salmon with Rice and Broccoli

This quick and easy ginger soy salmon recipe uses Frontier Co-op Ground Ginger and Garlic Powder for fast prep. And this salmon entree makes a balanced meal with help from brown rice and broccoli.

Ingredients

  • 2 tablespoon soy sauce 

    2 teaspoons pure maple syrup 

    1 teaspoon sesame oil 

    1 teaspoon Frontier Co-op Ground Ginger 

    1/2 teaspoon Frontier Co-op Garlic Powder 

    4 (4 ounces each) salmon filets 

    2 cups cooked brown rice 

    1 pound fresh broccoli, steamed 

    2 tablespoons olive oil 

    2 teaspoons rice vinegar 

    1/2 teaspoon Frontier Co-op Sea or Pink Himalayan Salt 

Directions

    1. Preheat oven to 425 degrees and line a baking sheet with parchment paper. In a small bowl, combine soy sauce, maple syrup, sesame oil, ginger and garlic powder.  

    1. Place salmon skin-side down on baking sheet and brush fillets with soy sauce mixture. Let rest while oven preheats, then brush again with mixture just before placing in oven.

    1. Bake for 12 minutes, until flaky all the way through. Divide cooked brown rice onto 4 plates and top with salmon fillets. Toss steamed broccoli with olive oil, rice vinegar and salt. Add to plate, then serve.
