Ingredients

1 cup Frontier Co-op® Deluxe Vegetable Soup Blend
¼ cup Frontier Co-op® Organic No-Chicken Broth Powder
1 teaspoon Frontier Co-op® Organic Garlic Granules
½ teaspoon Frontier Co-op® Sea Salt
2 ½ cups water
3 cups plain, unsweetened nut milk (almond, cashew, etc.)
3 cups chopped fresh broccoli florets
3 tablespoons butter, vegan butter or olive oil
½ cup Frontier Co-op® Nutritional Yeast Mini Flakes
½ teaspoon Frontier Co-op® Organic Paprika
1 teaspoon Frontier Co-op® Organic Veggie Pepper
Directions
- In a large pot, combine vegetable blend, broth powder, garlic granules, sea salt and water. Bring to a boil, then reduce heat to medium and cover with a lid.
- Cook for 25 to 30 minutes, until soup vegetables are tender and the water has reduced by 2 cups (so that about ½ cup liquid is left in the pot).
- Add nut milk to pot and use an immersion blender to puree until as smooth as possible.
- Add broccoli, butter or olive oil, nutritional yeast flakes, paprika and veggie pepper. Stir until well combined. If mixture is too thick, thin with additional nut milk or water to desired consistency.
- Cover with lid, simmer until broccoli is tender (approx. 10 to 20 minutes, depending on size of broccoli pieces and your desired texture), stirring occasionally to avoid sticking or scorching. Adjust seasonings to taste, and serve.
RECIPE TIP:
For an attractive presentation, top each bowl with fresh parsley, a drizzle of olive oil, and freshly toasted croutons.
