1. In a medium mixing bowl, break mushrooms into 1/4-inch pieces. Add hot water and let re-hydrate 5 to 10 minutes, then drain.
2. Divide meat into 8 equal portions. Form each into a patty.
3. In bowl with mushrooms, add cheese, red sea salt and thyme leaf. Mix well. Scoop an equal portion onto 4 of the patties. Take the remaining 4 patties and mold onto patties topped with cheese mixture. Make sure patties are sealed and flattened.
4. Grill, broil or cook in pan on stovetop until done.
Serve with whole wheat bun, spinach leaves and sliced tomatoes.Turn into 1/4-pound burgers and make into 8 servings.
