Cajun Bean Cornbread Casserole

This wholesome and hearty cornbread casserole offers a unique twist on a traditional favorite. With a few dashes of zesty Cajun seasoning, pinto beans and cheese, this casserole takes cornbread to an entirely new level.

    1. Preheat oven to 400 degrees. In a large bowl, mix honey, buttermilk, eggs and butter. 
    2. In a medium bowl, mix flour, baking powder, baking soda and Cajun Seasoning, then add to liquid ingredients and mix well.
    3. Pour into a buttered 9-x -2-inch pan. Bake 20 minutes or until bread tests dry.
    4. Meanwhile, sauté onion in olive oil. Add carrot and sauté another 2 minutes. Add pintos, catsup, mustard, Cajun Seasoning and molasses. Heat thoroughly.
    5. Slice cornbread into a 1/2-inch layer and place in bottom of 8-inch square baking dish. Cover cornbread layer with 1/2 cup cheese. Cover cheese layer with bean mixture, and top with remaining cheese.
    6. Bake until cheese melts, about 15 minutes. Decorate with wedges of remaining cornbread and serve.
