Cajun Rice

Sprinkled with chipotle peppers, onions, tomatoes, green peppers and mushrooms, this hearty rice dish offers wonderfully balanced Cajun flavor. Serve on its own, with meat or seafood -- or with a rich roux sauce for a more authentic flair.


  • 1 cup brown rice, raw

  • 1 teaspoon Frontier Co-op Minced Garlic Flakes

  • 2 tablespoons oil

  • 3 cups water

  • 1 cup Frontier Co-op Minced Onion Flakes

  • 1 Frontier Co-op Chipotle Chili Pepper

  • 1 green pepper, chopped

  • 1 cup mushrooms, sliced

  • 2 tomatoes, chopped

  • 1 teaspoon Frontier Co-op Ground Allspice

  • 1/2 cup grated cheese


    1. In a heavy skillet, sauté the rice and garlic flakes in 1 tablespoon of oil. Pour boiling water into the skillet and cover. Simmer 30 minutes.

    2. Meanwhile, in another skillet, sauté the onion flakes, peppers, and mushrooms in the remaining oil. Add the cooked vegetables to the rice. Add tomatoes and allspice and stir.

    3. Top with grated cheese and cover until melted.
