Orange Whoopie Pies with Chocolate Cream Cheese Frosting

Made with organic orange peel granules and carrot juice and filled with rich chocolate cream frosting, these whoopie pies get their rich flavor and color from all natural ingredients. Best when served with a mug of hot cider.



    1. Preheat oven to 400 degrees.

    2. In a large bowl, combine honey, orange peel granules, carrot juice, melted butter, vanilla extract, egg and yogurt. Stir until well combined.

    3. In a separate bowl, whisk together flour, sea salt, baking soda and baking powder. Pour dry ingredients into the wet ingredients and stir until well combined.

    4. Onto 2 baking trays lined with parchment paper, using a cookie scoop or spoon, divide batter into 24 3/4-ounce scoops (12 on each tray). Place in the oven and bake for 8 to 10 minutes, rotating trays after 4 minutes, until cookies are golden and spring back when pressed. Remove from oven and let cool for 5 minutes. Transfer to a cooling rack and let sit until completely cool.

    5. In a large bowl, combine cream cheese and butter. Using a hand mixer or wooden spoon, cream the butter and cream cheese together. Add vanilla, cocoa powder, powdered sugar and heavy cream. Continue to beat until frosting is well mixed and chocolate is lighter in color.

    6. Once the cookies have cooled, scoop about a tablespoon of frosting onto one flat side of 12 of the cookies. Place each of remaining 12 cookies on top and lightly press down to even out frosting. Serve immediately or store in an airtight container for up to 3 days.

    For a stronger orange flavor, substitute orange juice for the carrot juice. If desired, substitute whole wheat pastry flour for the all-purpose flour, but expect a slightly different and taste.
