Maple Tapioca Pudding

1. Combine the sea salt, arrowroot, whole milk and vanilla extract in a double boiler. Cook while stirring over rapidly boiling water for 7 minutes.
2. Remove one cup of the hot liquid and blend with the arrowroot powder. Return liquid to the pot and stir. Cook 5 minutes or until tapioca is clear.
3. Remove from heat. Stir in vanilla, coconut and walnuts.Note Do not use instant tapioca.
