Ingredients
- 1 cup Frontier Co-op Sucanat, Organic, Fair Trade
- 2 Cinnamon Sticks 2 3/4 whole
- 4 Cloves Whole,Hand Sel. Org FTC
- 1 Star Anise, select whole
- husk and core (but not crown) of one organic pineapple, rough-cut into 1-inch chunks
- 1 paper towel or basket-style coffee filter, unbleached
- A half-gallon canning jar with two-part lid
Directions

1. Dissolve sugar in a pint of water in the jar. You may use hot water; if you do, wait until mixture falls below body temperature before proceeding to next step.2. Add cinnamon, other spices and pineapple chaff to the jar.3. Add (room-temperature) water to two inches below mouth of jar. 4. Secure towel or filter over mouth of jar using ring portion of lid, and leave at room temperature. 5 The wine is ready after 4 days to a week; strain and drink. Or if you prefer vinegar, wait 3 or 4 weeks, then strain and store in a sealed container.
