Herbed Fresh Tomato Sauce

This homemade tomato sauce recipe features the aromatic flavors of Italy and can be canned or frozen for future use. Simply sauté ingredients, blend and store -- simple and scrumptious!

Ingredients

  • 24 tomatoes, peeled

    3 large garlic cloves, chopped

    4 onions, chopped

    3 tablespoons olive oil

    1 teaspoon Frontier Co-op Organic Fennel 

    4 teaspoons Frontier Co-op Organic Basil

    3/4 teaspoon Frontier Co-op Organic Oregano 

    2 teaspoons Frontier Co-op Sea Salt

    1/4 cup lemon juice

Directions

    FOR SAUCE:

    1. Cut tomatoes into chunks and set aside. 

    2. In an enamel or stainless kettle, sauté the garlic and onions in oil until soft.

    3. Add tomatoes, fennel, basil, oregano and salt.

    4. Simmer for at least 2 hours, longer if possible. Stir occasionally to prevent sticking.

    5. Cool slightly, blend until smooth.

     

    TO CAN:

    1. Add lemon juice.

    2. Return to kettle, reheat. Pour while still hot into pre-heated, hot jars, leaving 1/2 inch headspace.

    3. Adjust lids. Process in a boiling water bath for 45 minutes.

     

    To FREEZE:

    1. Pour into freezer containers.

    2. Seal, label, date and freeze.
