Ingredients
- 1/2 cup Cacao Nibs FairTrade Organic
- 1 tablespoon FT Ceylon Cinnamon Grd Org
- 1/4 cup Cane Sugar, Organic 5#
- 8 ounces dates (pitted)
- 1 cup instant oats
- 3 tablespoons butter (unsalted), softened
- 1/2 cup peanut butter
- 1/4 cup shredded coconut
- 1/4 cup pistachios, lightly ground
Directions

In a food processor, combine dates, oats, and cacao
nibs, peanut butter and butter. Process on ‘high’
for about 1 minute until mixture is smooth.
Use a
tablespoon to scoop mixture and roll into balls.
Make the three dip mixtures Dip #1 Combine 1/4 cup sugar and cinnamon in a bowl. Dip #2 Pour
shredded coconut into a second bowl. Dip #3 Pour pistachios
into a third bowl.
Roll each energy bite in one of the
three coatings to create a holiday-themed medley.
