Herbed Baked Chicken Fingers

Hand breading is a fun way to add a zesty crunch to your baked chicken fingers. Breaded with flake cereal and panko bread crumbs and seasoned with paprika and herbes de Provence, this tasty baked chicken strip recipe can be served as is, with a dipping sauce, or sliced and tossed with salad.

Ingredients

  • 1/3 cup buttermilk

    1/2 teaspoon Frontier Co-op Paprika

    2 teaspoons Frontier Co-op Herbes de Provence

    1/4 cup Parmesan cheese

    1/3 cup flake cereal (flaked bran cereal works well)

    1 cup panko or regular bread crumbs

    1 pound chicken strips

     

Directions

    1. Preheat oven to 350 degrees. Into a shallow pan, pour buttermilk.
    2. In a separate shallow pan or bowl, add paprika, Herbes de Provence, Parmesan chesse, flake cereal and bread crumbs, and mix. Dip chicken strips first in buttermilk then in crumb mixture; place on a baking sheet.
    3. Bake for 10 to 15 minutes, depending on size of strips. Check for doneness. Chicken strips will come out crunchy and golden red-brown!
