1 cupHearty Vegetable Stew blend
1/2 teaspoonFrontier Co-op Table Grind Sea Salt
1/4 teaspoonFrontier Co-op Black Pepper, Medium Grind, Organic
2 pounds chicken breasts
3 or 4 egg whites
3/4 cup organic bread or cracker crumbs
1. Grind Soup Vegetables in a blender or coffee grinder. Add bread crumbs. Add salt and pepper (or leave out and season to taste at end). Place in shallow bowl.
2. Preheat oven to 375 degrees.
3. Beat 3 or 4 egg whites in a shallow bowl. Wash chicken breasts in the egg mix, then transfer to the breading.
4. Work the breading with your hands to get good coverage and gently place in a well-greased 3-quart casserole dish. Repeat with all the chicken and place in oven. Cook until completely done (30 to 40 minutes).
Lightly broil at the end to crisp seasoning. Serve with ketchup or sour cream.
