Easy French Onion Soup

Delicious and vegetarian-friendly, this French Onion Soup recipe is easier than it looks — thanks to ingredients from the bulk aisle! Featuring our shelf-stable dried onion, garlic and shiitake mushrooms, there’s no peeling, cutting or chopping needed.

    1. In a medium, heat-resistant bowl, pour the 2 cups hot water over onions; cover and let steep for 10 minutes.
    2. Strain onions and discard water. Set onions aside.
    3. In a medium pot, combine shiitake mushrooms, bay leaf and the 4½ cups water. Bring to a boil, then remove from heat and cover. Infuse for 20 to 30 minutes then strain, discarding mushrooms (or saving for another use) and bay leaf. Set mushroom liquid aside.
    4. In medium pot, melt vegan butter over medium heat. Add steeped onions and cook for 5 minutes.
    5. Add sherry and scrape bottom of pan to deglaze.
    6. Add mushroom liquid, garlic, broth powder, smoked salt, veggie pepper, thyme and sugar. Covered and bring to a simmer.
    7. Simmer for approximately 30 minutes, until onions and garlic are tender.
    8. Top with cheesy croutons and fresh parsley.

     

    To Make the Croutons:

    1. In a bowl, toss bread, olive oil, salt and pepper. Place bread cubes on a cookie sheet and bake for 15 minutes at 375°.
    2. Remove from oven and top with cheese slices.
    3. Return to oven for about 2 minutes, until cheese is melted and bubbly.
