Ingredients
- Blueberry Filling:
- 5 cups blueberries, washed and patted dry
- 2/3 cup Frontier Co-op® Organic, Fairtrade Cane Sugar
- 2 1/2 tablespoons Frontier Co-op® Cornstarch
- 1 tablespoon freshly squeezed lemon juice
- 3/4 teaspoon lemon zest
- 1/2 teaspoon Frontier Co-op® Regenerative Organic Certified® Vanilla Extract
- Oatmeal Crumb Crust and Topping:
- 2 cups quick-cooking oats
- 2 cups flour
- 1 1/3 cups brown sugar
- 1 1/4 teaspoons Frontier Co-op® Baking Soda
- 3/4 teaspoon Frontier Co-op® Regenerative Organic Certified® Ceylon Cinnamon
- 1/4 teaspoon Frontier Co-op® Sea or Himalayan Pink Salt
- 1 cup unsalted butter, melted
- 1 teaspoon Frontier Co-op® Regenerative Organic Certified® Madagascar Vanilla Extract
Directions
- Preheat oven to 350 degrees. Lightly grease a 9-x-13-inch baking dish and line with parchment paper.
- Heat a large sauce pan over medium heat, add blueberries, sugar, cornstarch, lemon juice, and lemon zest, and stir well to coat.
- After about 2 minutes, use a hand masher or the back of a wooden spoon to gently mash berries just to release a little of their juices. You want them to largely remain whole.
- Cook and stir for another 2 to 3 minutes, then reduce heat to medium-low. Mash gently again and cook, stirring occasionally to prevent sticking, for an additional 5 minutes until sugar and cornstarch dissolve and mixture begins to thicken. Remove from heat and stir in vanilla extract.
- Into a large bowl, add oats, flour, brown sugar, baking soda, Ceylon cinnamon, and salt, and stir to combine. Add melted butter and vanilla, and mix until well combined (it is easiest to use your hands).
- Set aside 2 cups oatmeal mixture for topping. Pour remainder into prepared baking dish; spread evenly and press down well.
- Spread berry mixture over crust and sprinkle remaining crumble over berries.
- Bake for 33 to 35 minutes, turning pan once while baking. Remove from oven and let cool completely to room temperature before cutting into bars. Serve and enjoy!
