This one-pan potato frittata recipe gives you a complete breakfast with tons of satisfying flavor from our Chipotle Ranch Wing Seasoning.

Ingredients
- 1 tablespoon + 1 teaspoon neutral oil or butter
- 1 bell pepper, medium chopped
- 1 medium onion, medium chopped
- 1 large russet potato, sliced 1/8-inch thick
- 10 eggs
- 2 tablespoons water
- 1 1/4 cups Monterrey Jack or similar white cheese, divided
- 3 tablespoons Frontier Co-op® Chipotle Ranch Wing Seasoning
Directions
- Preheat oven to 350 degrees.
- In a 10-inch oven-safe skillet, heat 1 tablespoon oil over medium-low heat. Add bell pepper and onion and sauté for about 10 minutes, until soft and slightly browned.
- Add remaining 1 teaspoon oil and use a paper towel to distribute oil around inner surface of pan, ensuring bottom and sides are well coated.
- Layer potatoes over peppers and onions in skillet. Place skillet in oven and par-bake potatoes for 10 minutes.
- In a medium bowl, whisk eggs with the 2 tablespoons water, then stir in 1 cup cheese and Chipotle Ranch Wing Seasoning.
- Remove skillet from oven and pour egg mixture into skillet. Sprinkle remaining ¼ cup cheese on top.
- Return skillet to oven and bake for 15 minutes, until eggs are set. Serve.
- Garnish with Frontier Co-op® Whole Leaf Cilantro.
- For a frittata with meat, add cooked chorizo.
