This one-pan potato frittata recipe gives you a complete breakfast with tons of satisfying flavor from our Chipotle Ranch Wing Seasoning.

Ingredients

  • 1 tablespoon + 1 teaspoon neutral oil or butter
  • 1 bell pepper, medium chopped
  • 1 medium onion, medium chopped
  • 1 large russet potato, sliced 1/8-inch thick
  • 10 eggs
  • 2 tablespoons water
  • 1 1/4 cups Monterrey Jack or similar white cheese, divided
  • 3 tablespoons Frontier Co-op® Chipotle Ranch Wing Seasoning

Directions

  1. Preheat oven to 350 degrees.
  2. In a 10-inch oven-safe skillet, heat 1 tablespoon oil over medium-low heat. Add bell pepper and onion and sauté for about 10 minutes, until soft and slightly browned.
  3. Add remaining 1 teaspoon oil and use a paper towel to distribute oil around inner surface of pan, ensuring bottom and sides are well coated.
  4. Layer potatoes over peppers and onions in skillet. Place skillet in oven and par-bake potatoes for 10 minutes.
  5. In a medium bowl, whisk eggs with the 2 tablespoons water, then stir in 1 cup cheese and Chipotle Ranch Wing Seasoning.
  6. Remove skillet from oven and pour egg mixture into skillet. Sprinkle remaining ¼ cup cheese on top.
  7. Return skillet to oven and bake for 15 minutes, until eggs are set. Serve.
 
NOTES
  1. Garnish with Frontier Co-op® Whole Leaf Cilantro.
  2. For a frittata with meat, add cooked chorizo.
