

Ginger Soy Salmon with Rice and Broccoli

This quick and easy ginger soy salmon recipe uses Frontier Co-op Ground Ginger and Garlic Powder for fast prep. And this salmon entree makes a balanced meal with help from brown rice and broccoli.

Ingredients
- 2 tablespoons soy sauce
- 2 teaspoons pure maple syrup
- 1 teaspoon sesame oil
- 1 teaspoon Frontier Co-op® Ground Ginger
- 1/2 teaspoon Frontier Co-op® Garlic Powder
- 4- 4 ounces each salmon filets
- 2 cups cooked brown rice
- 1 pound fresh broccoli, steamed
- 2 tablespoons olive oil
- 2 teaspoons rice vinegar
- 1/2 teaspoon Frontier Co-op® Sea or Pink Himalayan Salt
Directions
- Preheat oven to 425 degrees and line a baking sheet with parchment paper. In a small bowl, combine soy sauce, maple syrup, sesame oil, ginger and garlic powder.
- Place salmon skin-side down on baking sheet and brush fillets with soy sauce mixture. Let rest while oven preheats, then brush again with mixture just before placing in oven.
- Bake for 12 minutes, until flaky all the way through.
- Divide cooked brown rice onto 4 plates and top with salmon fillets.
- Toss steamed broccoli with olive oil, rice vinegar and salt. Add to plate, then serve.
