For the Compote:
  1. Into a small saucepan, add elderberries, water, honey, balsamic vinegar, salt, and black pepper; bring to a boil, then reduce to a simmer.
  2. Use the back of a spoon to mash berries, and cook for 20 to 25 minutes, stirring every 5 minutes, until berries are tender and sauce is thick. Remove from heat and let cool.
For the Havarti Grilled Cheese:
  1. Heat a small nonstick skillet over medium heat until warm. Butter one side of each slice of bread and place one slice buttered-side down in pan. Spread on one tablespoon elderberry compote, layer on Havarti and fresh mozzarella, and top with basil leaves.
  2. Place second slice of bread on top, buttered-side up. Cook for 3 to 5 minutes until bottom bread is golden, then flip and repeat on the other side.
  3. Remove when both sides are golden and cheese is melted. Enjoy!
