Ingredients
- Balsamic Elderberry Compote:
- 1 cup Frontier Co-op® Organic Whole European Elderberries
- 1 cup water
- 1/2 cup honey
- 1/4 cup balsamic vinegar
- 1 pinch Frontier Co-op® Sea or Himalayan Pink Salt
- 1 pinch Frontier Co-op® Organic Medium Grind Black Pepper
- Havarti Grilled Cheese Sandwich:
- 2 slices sourdough bread
- 1 tablespoon butter
- 2 slices Havarti cheese
- 2 slices fresh mozzarella cheese
- 2-3 fresh basil leaves
- 1-2 tablespoons Balsamic Elderberry Compote
Directions
- Into a small saucepan, add elderberries, water, honey, balsamic vinegar, salt, and black pepper; bring to a boil, then reduce to a simmer.
- Use the back of a spoon to mash berries, and cook for 20 to 25 minutes, stirring every 5 minutes, until berries are tender and sauce is thick. Remove from heat and let cool.
- Heat a small nonstick skillet over medium heat until warm. Butter one side of each slice of bread and place one slice buttered-side down in pan. Spread on one tablespoon elderberry compote, layer on Havarti and fresh mozzarella, and top with basil leaves.
- Place second slice of bread on top, buttered-side up. Cook for 3 to 5 minutes until bottom bread is golden, then flip and repeat on the other side.
- Remove when both sides are golden and cheese is melted. Enjoy!
