  1. Cut open melons and discard seed clusters from cantaloupe and honeydew. Using a melon baller, scoop out enough balls to make 3 cups of each melon. Alternatively, you can cut melons into cubes about 1-inch square.
  2. In a small bowl, whisk together vanilla, lime juice, lime zest, ginger and salt until well combined.
  3. In a large serving bowl, add melons and mint. Pour dressing over top and toss to combine. Serve immediately.
