These tender-crisp oven potato wedges get the tang of vinegar, the balance of sea salt and a pinch of garlic from one expertly crafted seasoning.

  1. Pre-heat oven to 400 degrees. Line a sheet tray with parchment paper and lightly spray or coat with oil.
  2. In a medium bowl, whisk or beat egg white and water for about 2 minutes until light and foamy.
  3. Toss potato wedges in egg white mixture until well coated, then place on sheet tray.
  4. Bake for 15 minutes, flip over and bake for another 15 to 20 minutes.
  5. Remove from oven and drizzle wedges with enough oil to coat, and toss to coat thoroughly.
  6. Sprinkle Salt and Vinegar Wing Seasoning over wedges, toss again and serve.
