Guar gum is the ground endosperm of the guar bean, an annual legume native to India and Pakistan. It's primary use is as an emulsifier and thickening agent.

Guar gum is used as a thickener, emulsifier and firming agent in baked goods, jams and jellies, soups, salad dressings, sauces, syrups, juices and dairy products. Use up to 1/2 tsp. per cup of liquid, or at a rate of up to 1% by weight.
