Quick French Onion Soup

For a classic bistro-tasting soup in a pinch, this quick French onion soup recipe is just the ticket. The rich, melt-in-your-mouth flavor makes a perfect first course, but this recipe is also filling enough to be a main entrée.

Ingredients

  • 2 tablespoons butter

    2 large onions, sliced

    1 quart water

    2 tablespoons Frontier Co-op Low-Sodium Organic Vegetable-Flavored Broth Powder

    4 slices French bread

    1 cup Gruyere or mozzarella cheese, grated

Directions

    1. In a medium pot, add butter and sauté onion slices until translucent. Add water and heat to a low boil. Add broth powder and stir well.

    2. Preheat oven to 350 degrees. Pour soup into individual, oven-proof soup bowls. Place one slice of bread in each bowl, and top with cheese. Bake for about 15 minutes until cheese melts.
