Berry Yogurt Granola Bars

Easy homemade granola bars topped with a sweet yogurt glaze. Perfect for car snacks or afternoon snacks!

Ingredients

  • 2 cups rolled oats

  • 1 1/2 cups rice puffs

  • 1/4 cup unsweetened coconut, shredded

  • 1/4 cup sunflower seeds

  • 2 tablespoons Frontier Co-op Chia Seeds

  • 1/4 teaspoon Frontier Co-op Sea Salt

  • 1 cup dried cranberries, blueberries or strawberries

  • 1/2 cup tahini

  • 3/4 cup brown rice syrup

  • 2 teaspoons Frontier Co-op Ground Cinnamon

  • 2 1/2 teaspoons Frontier Co-op Vanilla Extract, divided

  • 1 1/2 cups powdered sugar

  • 2 to 3 tablespoons plain whole-milk yogurt

Directions

    1. Combine rolled oats, rice puffs, coconut, sunflower seeds, chia seeds, salt, and dried fruit in a bowl. Stir to combine.
    2. Combine tahini, rice syrup, cinnamon, and 2 teaspoons vanilla extract in a small saucepan. Stir and cook until mixture is combined and warm. Pour over rolled oat mixture and stir until everything is well combined.
    3. Transfer to an 8-x-8-inch pan lined with wax paper or parchment. Press mixture into pan and place in refrigerator for 30 minutes.
    4. While bars are chilling, combine powdered sugar and 1/2 teaspoon of vanilla extract in a bowl. Add 2 tablespoons of the yogurt and stir until smooth. Add more yogurt if glaze is too thick to stir. The glaze should be thick.
    5. Remove bars from the refrigerator and cut into roughly 12 bars. Drizzle with yogurt glaze and refrigerate for another 30 minutes, until glaze is set. Store these bars in the refrigerator for up to one week.
