Elderberry and Blueberry Mocktail

Ingredients

For the Elderberry Syrup:
1 cup Frontier Co-op Whole Elderberries
3 cups water
1 cup honey or agave syrup
Frontier Co-op Cinnamon, Ginger, or Cloves, optional
For the Mocktail:
½ cup elderberry syrup
2 tablespoons fresh lime juice
36 fluid ounces sparkling lime soda
¼ cup fresh spearmint leaves, mashed
8 ounces blueberries
Directions
- In a sauce pan with a lid, place 1 cup dried elderberries and 3 cups water. If desired, stir in 3 tablespoons of any combination of powdered ginger, cinnamon or cloves.
- Bring to a boil. Reduce heat to a simmer, partially covered. Simmer, stirring occasionally, for 30 to 40 minutes until liquid is reduced by half.
- Remove from heat, let cool and pour through strainer into a heat-proof bowl. Discard berries.
- Stir in honey or agave syrup.
- Pour into a jar with a lid. May be stored in refrigerator for up to two weeks.
- In a glass bowl, combine ½ cup elderberry syrup, lime juice, spearmint and blueberries. Lightly mash together with a muddler so that some blueberries break and release their juices.
- In a pitcher, combine berry mixture and lime soda, stirring to mix thoroughly.
- Pour over ice and add lime slices and mint leaves for garnish. Serve.
