Coconut Chocolate Truffles

These vegan-friendly chocolate truffles are loaded with coconut inside and out, and sweetened with agave or maple syrup, avoiding processed sugar. Feel even better using our organic, fair trade cocoa powder!

Makes 12 to 14 truffles.

  1. In a medium bowl, stir together 1 cup shredded coconut, cocoa powder and salt.
  2. Add melted coconut oil, agave, vanilla extract and coconut flavor, stirring well to combine. Place bowl in refrigerator for about 30 minutes to cool and solidify.
  3. Place remaining coconut in a small bowl. Remove truffle mixture from refrigerator and use a 1Ā½-tablespoon cookie dough scoop to portion out truffles. Roll each into a uniform ball with your hands, then roll each truffle in coconut and place on a sheet pan or platter.
  4. Return to refrigerator for 30 minutes to set. Store in an airtight container in the refrigerator.
