A nice, simple, and deeply flavored homemade enchilada sauce thatā€™s sure to impress. Deep tomato notes pair beautifully with the spicy and citrusy notes of the dark chili powder and go excellently with cheese, chicken, beef and plant-based proteins. 

Makes 1 1/4 cups sauce.

  1. In a medium saucepan over medium heat, add oil and onion. SautƩ for about 4 to 6 minutes, stirring, until translucent.
  2. Add garlic and sautƩ for another 1 to 2 minutes, until fragrant.
  3. Whisk flour into saucepan and mix with oil until a paste forms. Add tomato paste and whisk to blend.
  4. Slowly add water, whisking mixture to maintain a smooth sauce.
  5. Add dark chili powder and salt, bring to a boil, then reduce heat and simmer for 10 minutes.
 
NOTES
  1. Makes a great sauce for the top of enchiladas, or can be used as the filling if mixed with cooked chicken, beef or other proteins.
