Dutch-processed, (alkalized) cocoa powder produces the classic flavor associated with a mug of hot cocoa -- balanced and rounded chocolatey flavor, creamy texture and a mere hint of bitterness.

  1. In a small saucepan over medium heat, bring milk to simmer.
  2. Add cocoa and sugar. Whisk vigorously until fully dissolved and frothy, and serve.
 
NOTES
  1. For an extra treat, garnish with sweetened, vanilla-flavored whipped cream.
  2. For an adult version, add 1/2 jigger of brandy, Irish cream or coffee liqueur.
  3. To make the recipe dairy free, use oat milk in place of whole milk.
