  1. Using a stand mixer, in a medium mixing bowl beat softened butter until smooth.
  2. Add sugars and mix until well blended. Add egg and mix well.
  3. Cut vanilla bean in half and scoop out the inside into the mixing bowl. Slowly add remaining ingredients, mixing until thoroughly combined.
  4. Shape rounded tablespoons of dough into balls and place 2 inches apart on a parchment-lined cookie sheet.
  5. Bake at 350 degrees for 8 to 10 minutes.
