Classic elotes made by grilling fresh sweet corn and lathering it with mayo, smoked paprika, and cotija.

  1. Light the grill. Prepare corn by removing the husk — peeling it down but leaving it attached at stem if possible. Take one piece of husk and tie it around the remaining pieces of husk for that ear. Remove silk and repeat the process with remaining ears of corn.
  2. Grill sweet corn, turning occasionally, until corn is charred around the ears. Remove from heat and lather with mayonnaise. Sprinkle with smoked paprika, Cotija cheese, salt and lime juice before serving.
  3. For a kick of heat, sprinkle with a bit of Frontier Co-op® Cayenne.
