Ingredients
- 1/2 cup Frontier Co-op® Cane Sugar
- 1/2 cup water
- 2 teaspoons lime zest
- 2 limes, juiced (about 3 tablespoons lime juice)
- 4 cups diced fresh mango
- 1 cup coconut milk
- 1 1/2 teaspoons Frontier Co-op® Pure Vanilla Extract
Directions
- In a small saucepan over medium heat, add sugar, water and lime zest. Bring to a simmer, stirring until sugar has dissolved, then remove from heat. Let cool, then strain out lime zest.
- Into a blender, add mango, coconut milk, lime juice, lime mixture and vanilla extract, and blend until smooth. Pour into a shallow container and freeze for about 6 hours, until frozen solid.
- Remove from freezer and let sit at room temperature for 5 minutes, then use a fork to scrape the mixture until it’s fluffy. Serve right away or return to the freezer until ready to serve.
