Ingredients

2 pounds sweet potatoes, baked until just tender (about 45 to 60 minutes @ 350 degrees)
2 tablespoons maple syrup
2 tablespoons butter
1 tablespoon lemon juice
1/4 teaspoon Frontier Co-op Organic Ground Cinnamon
1/4 teaspoon Frontier Co-op Sea Salt
2 teaspoons Frontier Co-op Organic Tarragon
1 tablespoon Frontier Co-op Organic Parsley
2 tablespoons roasted cashews
Directions
- Peel and slice hot sweet potatoes (about 1/4 inch thick) and place slices in a shallow serving dish.
- In a small saucepan, combine maple syrup, butter, lemon juice, cinnamon, sea salt and tarragon, and heat until melted. Pour over potatoes.
- Sprinkle with parsley and cashews, and serve.
RECIPE TIP:
You can prepare this dish a day ahead and simply reheat in the oven (covered for 20 to 30 minutes @ 350 degrees) just before serving, if you like.
