

Tarragon Sweet Potatoes

Tarragon adds a fresh note to sweet potatoes. Glazing with a sweetener cinches its status as a festive dish. Once the potatoes are baked, the dish takes just a few minutes to put together!

Ingredients
- 2 pounds sweet potatoes
- 2 tablespoons maple syrup
- 2 tablespoons butter
- 1 tablespoon lemon juice
- 1/4 teaspoon Frontier Co-op® Organic Korintje Cinnamon
- 1/4 teaspoon Frontier Co-op® Sea Salt
- 2 teaspoons Frontier Co-op® Organic Tarragon
- 1 tablespoon Frontier Co-op® Organic Parsley
- 2 tablespoons roasted cashews
Directions
- Preheat oven to 350 degrees. Place sweet potatoes on a sheet pan and bake for 45 to 60 minutes, until just tender.
- Remove from oven and peel the sweet potatoes, taking care not to burn your fingers. Slice potatoes about 1/4 inch thick, and place in a shallow serving dish.
- In a small saucepan, combine maple syrup, butter, lemon juice, cinnamon, sea salt and tarragon, and heat until melted. Pour over potatoes.
- Sprinkle with parsley and cashews, and serve.
- You can prepare this dish a day ahead and simply reheat in the oven (covered for 20 to 30 minutes @ 350 degrees) just before serving, if you like.
- For an even more festive presentation and aromatic effect, sprinkle with fresh rosemary leaves.
