Ingredients

Directions

  1. Preheat oven to 350 degrees. Place sweet potatoes on a sheet pan and bake for 45 to 60 minutes, until just tender.
  2. Remove from oven and peel the sweet potatoes, taking care not to burn your fingers. Slice potatoes about 1/4 inch thick, and place in a shallow serving dish.
  3. In a small saucepan, combine maple syrup, butter, lemon juice, cinnamon, sea salt and tarragon, and heat until melted. Pour over potatoes.
  4. Sprinkle with parsley and cashews, and serve.
Recipe Notes:
  1. You can prepare this dish a day ahead and simply reheat in the oven (covered for 20 to 30 minutes @ 350 degrees) just before serving, if you like.
  2. For an even more festive presentation and aromatic effect, sprinkle with fresh rosemary leaves.
