For the Lavender Earl Grey Simple Syrup:
1 cup water
2 cups Frontier Co-op Organic Fair Trade Cane Sugar
3 tablespoons Frontier Co-op Organic Lavender Flowers
3 tablespoons Frontier Co-op Organic Fair Trade Earl Grey Black Tea leaves
For the Lavender Sugar Rim:
1 cup Frontier Co-op Organic Fair Trade Cane Sugar
½ cup Frontier Co-op Organic Lavender Flowers
1 lemon wedge
For the Cocktail:
1½ parts vodka
1 part Lavender Earl Grey Simple Syrup
½ part lemon juice
Ice
Sliced lemons for garnish (optional)
Directions
1. Make the Lavender Earl Grey Simple Syrup: in a saucepan combine the water, 2 cups sugar, 3 tablespoons lavender flowers and the Earl Grey Tea leaves. Stir and bring to a boil, then reduce to low and let simmer for 5 minutes. Remove from heat and let steep until cool. Strain into a jar and chill. (Store unused portion in the refrigerator for up to 2 weeks.)
2. Make the lavender sugar for rim: In a deep bowl, combine remaining 1 cup sugar and ½ cup lavender flowers, and mash together with a pestle. Or, pulse in a food processor until well blended.
3. Place desired amount of lavender sugar into a wide lid or on a plate. Wet rim of cocktail glass with lemon wedge, then dip rim into lavender sugar. (Store unused portion of lavender sugar in an airtight container.)
4. In a cocktail shaker, combine vodka, Lavender Earl Grey Simple Syrup, lemon juice and ice. Shake well and strain into cocktail glass, then garnish with a lemon wheel if desired.
